Banana Pancakes

I needed to prepare a quick meal before the bf headed off to the train station and had a couple of bananas lying around. So naturally I made some banana pancakes using the Fluffy Panckes recipe from AllRecipes.com. I just added bananas.

They were pretty delish! Here’s a summary of the recipe:

Ingredients:

  • 3/4 cup milk
  • 2 tbsp. white vinegar
  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 egg
  • 2 tbsp. melted butter
  • 2 ripe bananas (mashed or sliced)
  • cooking oil for the pan

Directions:

  1. Combine milk and vinegar in a bowl and leave for 5 minutes to “sour”.
  2. Combine flour, sugar, baking powder, baking soda, and salt in another bowl.
  3. Mix egg, butter and bananas into the “sour” milk.
  4. Mix dry ingredients into the wet ingredients.
  5. Heat a frying pan over medium heat, and add cooking oil to prevent sticking.
  6. Pour large spoonfuls of batter onto skillet (vary sizes for optimal eating enjoyment), and cook until bubbles appear on the surface. Flip and cook until browned on the other side.

Notes:

  • I don’t have baking soda so I just use 4 times the amount of baking powder (see Joy of Baking for ingredient substitutions).
  • I halved the recipe, still used one egg and it was fine.
  • The “banana-y-ness” of your pancakes will depend on the size of bananas you use. I used smallish (whatever that means) bananas and it was still pretty tastydactyl.
